Recipe: Double Chocolate Muffins

Servings: 6-8 large muffins

Ingredients

  • 1 cup white whole wheat flour
  • 1/4 cup cacoa powder
  • 1/2 cup coconut sugar
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1 egg
  • 1/4 cup liquid coconut oil
  • 1/4 cup unsweetened coconut milk
  • 1 tsp vanilla
  • 2 tbsp cooled coffee (mushroom or herb coffee work as well)
  • 1/2 cup Greek yogurt
  • 1 cup mini chocolate chips + extra for topping

Directions

  1. Preheat oven to 375º.
  2. Mix wet and dry ingredients separately, then combine wet ingredients into dry.
  3. Let batter sit for 10 minutes. Bake for 16-18 minutes.

Note: These muffins are great with raspberry jam (as pictured).
