
Recipe: Double Chocolate Muffins

Servings: 6-8 large muffins
Ingredients
- 1 cup white whole wheat flour
- 1/4 cup cacoa powder
- 1/2 cup coconut sugar
- 1/4 tsp salt
- 1 tsp baking soda
- 1 egg
- 1/4 cup liquid coconut oil
- 1/4 cup unsweetened coconut milk
- 1 tsp vanilla
- 2 tbsp cooled coffee (mushroom or herb coffee work as well)
- 1/2 cup Greek yogurt
- 1 cup mini chocolate chips + extra for topping
Directions
- Preheat oven to 375º.
- Mix wet and dry ingredients separately, then combine wet ingredients into dry.
- Let batter sit for 10 minutes. Bake for 16-18 minutes.
Note: These muffins are great with raspberry jam (as pictured).
